History
Espresso originated in Italy in the early 20th century, and its popularity quickly spread throughout Europe and the rest of the world. The first espresso machine was invented in 1884 by Angelo Moriondo, but it wasn't until 1901 that Luigi Bezzera patented a machine that brewed coffee under pressure, creating the thick, concentrated drink we know today. The term "espresso" comes from the Italian word for "pressed out," referring to the method of forcing hot water through finely ground coffee beans under high pressure. Espresso also means ‘fast’ as the extraction time in an espresso is quite fast compared to other brewing methods. 

What Is An Espresso?
To make an espresso shot, water is heated to around 195-205°F (90-96°C) and forced through a compacted puck of finely ground coffee using high pressure. To brew an espresso, the grind size is always fine because a finer coffee holds the high pressure water for a longer duration, extracting more flavour. This process extracts the coffee's oils and flavours, creating a small but strong shot of espresso. The ideal brew time is around 25-30 seconds, and the resulting shot should be thick and creamy with a layer of crema on top. 

Where manual espresso machines are used, the water pressure is created by pulling a lever by hand and hence we often refer to making an espresso as ‘pulling an espresso shot’. However, there are many automatic and semi-automatic machines today which do not use a lever.

Espresso is a versatile brewing method that can be used in a variety of drinks, from cappuccinos to lattes to Americanos. Its strong flavour and concentrated nature make it the perfect base for these drinks, and it can also be enjoyed on its own. Espressos are also being used in cocktails like espresso martinis and other coffee based drinks. Espressos are truly versatile!

How Does An Espresso Taste
Espresso has a bold, intense flavour that's both rich and complex. It's often described as having notes of chocolate, caramel, and nuts, with a hint of bitterness. The crema on top adds a creamy texture and a slightly sweet taste. The taste of espresso can vary depending on the type of coffee used, the roast level, and the brewing method, but it's generally a strong and flavorful drink. In Europe, people prefer to have a single shot  (solo) of espresso post meals. The most commonly served espresso is the double shot espresso (doppio). Rarely a triple shot of espresso (triplo) is also served.

Which Coffee Is Best Suited To Pull An Espresso?
The best coffee for espresso is a blend of Arabica and Robusta beans, with a medium to dark roast. Arabica beans provide the flavour and aroma, while Robusta beans add the cream and body. The ideal grind for espresso is very fine, almost powdery, to ensure that the water is forced through the grounds under high pressure. Artisanal coffees will definitely give more flavour and notes compared to store bought coffees.
